Yield: 4 cups
Ingredients:
800 ml tomato puree
1/4 cup olive oil
1 onion finely chopped
1/2 cup red wine(optional but gives a nice depth to the flavor)
1 garlic clove finely minced
1 small tin of tomato paste (156 ml)
salt, pepper and sugar to taste
2 tablespoons of fresh basil or oregano, or 1 teaspoon of each dried.
Directions:
1. Add olive oil to a medium sized pot that is on medium heat. Add onions and cook until transparent and slightly brown, about 5 minutes. Add garlic, cook for a minute, don’t burn.
2. Add red wine, reduce to 1/4 cup. Add tomato paste, mix in well, cook for 1 minute. Add the tomato puree and dried herbs. Add fresh herbs, if you have, near the end of simmering.
3. Let the tomato sauce simmer on low for 30 minutes. While simmering, add salt, pepper and sugar. When finished simmering, you may want to add more seasoning to your taste.
