Pat’s Curried Carrot Orange Soup

My friend Pat passed this flavorful soup recipe on to me to share on my blog.  Please try it, it is delicious and healthy.

Prep time: 10 minutes

Cooking time: 35 minutes

Serves: 4

Ingredients:

1 tsp. vegetable oil
1 1/2 minced garlic
1 tsp curry powder
1 cup onions or sliced leeks
1 lb. carrots, peeled, sliced
3 3/4 cups chicken stock
1 cup sweet potatoes- peeled and cut into 1 1/2 inch dice
1/2 cup orange juice
2 tbsp honey
1 tbsp grated orange zest(1 large orange)

Directions:

1.  In non-stick pan heat oil over medium heat. Add garlic, curry,onions, and carrots; cook for 5 min. or until onions softened. Add stock and sweet potatoes and bring to a boil.

2.  Cover, reduce heat to low and simmer 25 min. or until carrots and sweet potatoes are tender.

3.  Transfer soup to food processor or blender; puree. Return to saucepan and stir in orange juice, honey and zest.
