Easy dressing for gyros, or Greek salad. Also makes a nice dipping sauce for veggies, pita chips or souvlaki. Serve with my grilled pork souvlaki.
Yield: 2.5 cups
2 cups plain Greek yogurt- or any other kind of plain yogurt-some don’t like the taste of Greek yogurt
1 cup finely diced seedless cucumber
1 tablespoon olive oil
1/2 lemon juiced
salt and pepper to taste
1 tablespoon chopped fresh dill
2 cloves garlic peeled and finely minced
Mix all ingredients together until well combined. Transfer to a separate dish, cover and refrigerate for at least one hour for best flavor.
