Grilled Pork Souvlaki

Use a very tender cut of pork for this Greek style grilled entree.  Marinate pork(with onions and green or red pepper if you like) in the lemon soy mixture.  Thread onto skewers and grill.  I just used the pork this time as I had some asparagus I wanted to use for a vegetable.  I used wooden skewers.  I soaked them in water for 2-3 hours.  If the wooden skewers are soaked they burn up as easily on the BBQ.  I served the souvlaki with my lemon potatoes(love them). A tzatziki sauce would taste yummy with the souvlaki, use as a dipping sauce.

Soaking Wooden Skewers

Prep time: 30 minutes-2-3 hours for marinating

Cooking time: 15 minutes

Serves: 4-6 –  10-12 skewers

Ingredients:

12 wooden or metal skewers

2 pork tenderloins cut into 1 inch cubes

1 lemon juiced

1/4 cup olive oil

1/4 cup soy sauce

1 tablespoon fresh oregano, chopped- or 1 teaspoon of dried oregano

3 garlic cloves crushed

2 medium white, yellow or red onions cut into 1 inch pieces

2 green or red bell peppers cut into 1 inch pieces

Directions:

1.  In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano and garlic.  Add pork, onions and peppers, stir to coat.  Cover and refrigerate for 2 to 3 hours.

2.  Preheat grill to medium high heat.  Thread pork, onions and peppers onto the skewers.

3.  Grill for 10-15 minutes, or to desired doneness, turning skewers frequently for even cooking.  Please do not overcook as they will dry out easily.
