Roasted Red Pepper and Feta Spread

The inspiration for this recipe was our dinner at a Greek restaurant this past weekend. It’s super easy to make for a last minute appetizer.  Serve with warmed pita bread or pita chips.

Prep: 15 minutes

Serves: 4-6- makes 1 1/2 cups

Ingredients:

1 roasted red pepper, rinsed, drained and chopped

2 peperoncinis, seeded and chopped

1/2 pound or 8 ounces of feta cheese

Juice from 1 lemon

2 teaspoons of dried oregano

Ground black pepper to taste

1/4 teaspoon sea salt

Directions:

1.  Put all the above ingredients into a food processor and blend until a smooth paste.

2.  Serve with pita bread or fresh cut up vegetables.
