Roasted Baby Bell Peppers with Feta and Mint

I bought a bag of beautiful baby bell peppers, the colors are so vivid and fresh looking I couldn’t resist. When roasted they become so sweet and tender.  A simple way to prepare them would be to toss about 1 pound of them with olive oil, red pepper flakes, salt and pepper and roast them.  I am going to take it a  step further, please see the recipe below.

Prep time: 5 minutes

Cooking time: 10-15 minutes

Serves: 4

Ingredients:

1 pound of baby bell peppers

1/2 teaspoon red pepper flakes

2 tablespoons of olive oil

Salt and pepper to taste

1/2 cup crumbled feta cheese

2 tablespoons chopped fresh mint or 1 teaspoon dried mint(oregano or basil would also work, fresh or dried)

Directions:

1.  Preheat oven to 425 degrees F.

2.  Toss peppers in olive, salt, pepper and red pepper flakes.  Place on lined baking sheet and roast for 10-15 minutes until blistering and becoming golden brown.

3.  While peppers are hot, place in serving dish and crumble feta cheese and sprinkle with mint.  Serve.
