Feta Tapenade on Rice Cracker

By definition a tapenade is a savoury paste made from olives, capers and anchovies with olive oil and lemon juice.  A tapenade is delicious served as is, but I added some feta cheese as I had some in the refrigerator and I love feta cheese. You don’t need to add the feta cheese if it’s not something you like.

Serves: 4


9 oz (1 jar) black olives pitted (preferably Kalamata)

1 tablespoon capers

1 clove garlic

3 anchovies (optional)

2-4 tablespoons olive oil

squeeze of lemon

4 oz (1/2 cup) Feta cheese

salt & pepper

small round, plain rice crackers (or any rice cracker you like)


1. Add olives, capers, garlic and anchovies to your food processor and blend until almost a paste. Now add the feta cheese. Blend some more until almost a paste again.

2. Slowly drizzle in olive oil while mixing until a paste forms.

3. Season with salt, pepper and lemon.

4. Spread on rice crackers or use as dip.
