Hot Spinach and Artichoke Dip

This is one of those classic baked dips that everyone seems to like, so I thought I would post it, especially with the next month being a season of so many parties.  I like serving it with tortilla chips, but toasted bread  or pita chips will go well also.

Prep time: 15 minutes

Cooking time: 25 minutes

Yield: about 4 cups of dip

Ingredients:

1 – 8 ounce package of light cream cheese, softened at room temperature

1/4 cup light mayo

1/4 cup grated parmesan cheese

1/4 cup grated romano cheese

1 clove garlic minced

1/2 teaspoon dried basil

salt and pepper to taste

1 can(14 ounce) artichoke hearts, drained and chopped

1/2 cup frozen chopped spinach, thawed and drained

1/4 cup shredded mozzarella cheese

 

Directions:

1.  Preheat oven to 350 degrees F.  Lightly grease a small baking dish.

2.  Ina medium bowl, mix together cream cheese, mayonnaise, parmesan cheese, romano cheese, garlic, basil, salt and pepper.  Gently stir in artichoke hearts and spinach.

3.  Transfer the mixture to the prepared baking dish.  Top with mozzarella cheese. Bake int he preheated oven 25 minutes, until bubbly and lightly browned.
