Asian Chicken Lettuce Wraps

This is a very light and flavorful dinner.  Feel free to use ground turkey, beef or pork if that’s what you prefer or have on hand.  Grinding up the meat in the food processor is easy if you only have whole pieces of meat and want to know exactly what is in your ground meat.  Just cut up first into 1-2 inch chunks.

Ingredients:

3 tablespoons oil

2 boneless and skinless chicken breasts diced and then ground up in the food processor.

1 cup sliced water chestnuts finely chopped up

1/4 cup onion finely diced

2/3 cup mushrooms finely diced

1 garlic clove finely minced

1 small head of iceberg lettuce- with the core removed and leaves separated, washed and dried

1/2 cup green onion finely sliced up

1/4 cup fresh cilantro, chopped up

2 tablespoons hoisin sauce

 

Marinade for Chicken:

2 tablespoons soy sauce- China Lily is my favorite

2 tablespoons brown sugar

1 teaspoon rice wine vinegar

 

Drizzling Sauce:

2 tablespoons soy sauce- China Lily is my favorite

2 tablespoons rice wine vinegar

2 tablespoons ketchup

1 tablespoon lemon juice

1 garlic clove finely minced

2 tablespoons agave syrup or honey or 1/4 cup sugar- taste you may need more

1/2 teaspoon red chile paste for spice- optional

 

Directions: 

1.  Cut chicken breasts into 2 inch cubes, add to the food processor and process until a medium grind.

2.  Put the minced chicken into a medium bowl.  Mix together the ingredients for the marinade.  Add the marinade to the chicken and mix in well.  Let marinate for about 1 hour.

3.  Heat a medium sized saute pan to a medium heat, add oil, then add chopped mushrooms, onion, water chestnuts and garlic.  Saute until mushrooms and onion light brown.  Add marinated chicken, mixing it in well with the cooked vegetables.  Break up the chicken while it is cooking until well broken up. When finished cooking and a light brown, add the hoisin sauce, mix well.  Let cool down to warm and then add fresh cilantro, and green onion.  Mix in well and set the chicken mixture aside.

4.  Make the drizzling sauce by mixing up all the ingredients in a small bowl and test for taste.

5.  Serve the chicken mixture in the lettuce cups and drizzle with the “Drizzling Sauce”.  Garnish with green onion, carrot peels and fresh cilantro if you like.
