Apple Slaw

This apple slaw is quite versatile, use as a side dish for a main course or topping for fajitas, tacos, sandwiches or chicken, beef or turkey burgers. It imparts so many different flavors and a great crunch and texture.  

I’ve added fresh dill, you could add fresh tarragon, clilantro or chives.  Add some spice like curry, cumin, aleppo pepper or finely diced jalapeno.  I used green cabbage and red onion, you can use red cabbage and vidalia onion.  

Ingredients:

1 1/2 cups of small diced apple- I used gala, use whatever apple you desire

1/2 cup small diced red onion

1/2 cup small diced celery

1 large carrot peeled and grated- about 1 cup

2 cups of thinly sliced green cabbage

1/3 cup chopped fresh dill

5 tablespoons of light mayo

1 tablespoon dijon mustard

2 tablespoons of honey (less or more, whatever your taste)

1 tablespoon of fresh lime juice

Salt and freshly ground pepper to taste

Directions:

In a medium bowl, combine all the above ingredients, mix well and serve.
