I served these yummy morsels at my sister and brother in laws New Years Eve party, they went like hotcakes! Use a high quality bacon, not too salty. I used thick cut maple smoked bacon from Costco. For the cheese I used little chunks of parmesan, but you could use havarti, gouda, cheddar, asiago…whatever is your favorite or you have on hand.
Makes: 30 pieces
Ingredients:
15 strips of thick cut bacon cut in half, so now you have 30 pieces of bacon
Chicken breast cut into 1/4 inch thick strips that are about 2 inches long- you will need one large chicken breast or 2 small chicken breasts for this.
30 pieces of parmesan cheese-a little bigger than a matchstick but shorter ( you will see in the photos)
1/2 cup of red chili pepper jelly, any brand will do.
30 toothpicks
Directions:
1. Preheat oven to 400°F. Lay out half slices of bacon on a flat surface. Now lay a chicken strip across the piece of bacon and lay a piece of cheese on top of the piece of chicken.
2. Roll up each bacon slice around the chicken and parmesan cheese tightly. Secure with a toothpick and place on parchment lined baking sheet. Before I place the parchment paper on the baking sheet, I cover the baking sheet with tin foil, much easier clean up as you just pull up the tin foil after you are finished and throw everything in the garbage.
3. Place in preheated oven for 17 minutes, time or watch carefully because they will cook quickly. Melt the red pepper jelly in the microwave. At the end of 17 minutes the bacon should be getting crispy, now remove from oven. Brush each bacon roll with a generous amount of the melted jelly, so that each and every bacon roll has a nice glaze to it. Place the rolls back in the 400°F oven for another 5 minutes. Remove from the oven and serve with the toothpicks in place so that they are easier to eat while warm.
