Agave Syrup

* Agave syrup is some­thing I use quite reg­u­larly.  It dis­solves quickly and is 1.5 times sweeter than sugar, so you need less, so be care­ful.  Agave syrup comes from the  juice of the Blue Agave plant, the same plant that gives us tequila. It is processed at low tem­per­a­tures to pre­serve the enzymes, vit­a­mins and min­er­als.  The result­ing syrup is rich in mag­ne­sium, potas­sium, iron and cal­cium. Veg­ans like to use Agave nec­tar, because it is a plant prod­uct.  Agave syrup has a caramel corn syrup flavour, but is thin­ner in vis­cos­ity.  They say it is a safe sweet­ener for dia­bet­ics( it has a low glycemic index) because it does not spike blood sugar lev­els.  But look it up your­self on the inter­net if you are curi­ous, there is a lot of infor­ma­tion out there.  Like some­one once said, “you can eat almost any­thing in moderation”.
